Upgraded Oatmeal Raisin Cookies

Ingredients

  • 3 large, ripe bananas, mashed
  • 1 organic egg
  • 1 tsp. vanilla extract
  • ¼ cup coconut oil
  • 2 cups gluten-free oats
  • 2/3 cup almond meal
  • 1/4 cup coconut, shredded
  • 1 tsp. cinnamon
  • 1/2 tsp. fine grain sea salt
  • 1 tsp. baking powder
  • 1/2 cup hemp seeds
  • 1/2 cup chopped walnuts
  • 1/2 cup organic raisins or dried cherries (no added sugar)
  • 1/4 cup dark chocolate chips (I love @hukitchen)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl combine the bananas, egg, vanilla extract, and coconut oil. Set aside.
  3. In another bowl blend all dry ingredients including hemp seeds, walnuts, chocolate chips and raisins.
  4. Use a small scooper about 2 tsp in size, an inch apart, onto a parchment lined baking sheet.
  5. Bake for 18-22 minutes, or until the cookies are slightly golden brown on top.
  6. Let cool on a wire rack. They freeze great or store in the fridge to last longer.
  7. Enjoy.
