1 1/2 lb. Brussel Sprouts, trimmed and halved
3 Tbsp. Olive Oil
1 tsp. Sea salt
1/2 tsp freshly ground pepper
2 pears, cored and sliced or coarsely chopped (about 2 cups)
2 tsp Orange Zest
2 Tbsp. Fresh squeezed Orange juice
2 Tbsp. Toasted Pine nuts
1.) Preheat oven to 425. Line a baking sheet with parchment paper. Add Brussel sprouts to pan. Drizzle with olive oil and sprinkle with salt/pepper: toss to coat.
2.) Roast approx. 15 minutes. Stir in pears. Roast 10 minutes more or until sprouts are crisp/tender and pears are tender. Sprinkle orange zest and drizzle with orange juice.
3.) Transfer sprouts and pears to a serving dish. Sprinkle with toasted pine nuts.
