Mango Dream Popsicles

Here’s what makes these homemade pops different – the addition of coconut creme. High in healthy fat, the coconut creme is able to blunt the blood sugar spike that would otherwise happen from consuming mangos and bananas alone.

Ingredients

Scale
  • 1 banana
  • 1 Can Full Fat Coconut Milk
  • 1 cup frozen mango
  • 1 Tbsp maple syrup or raw honey or 13 drops liquid monk fruit sweetener

Instructions

  1. Add all the ingredients to a high speed blender and blend on high.
  2. Pour the blended crème into popsicle molds (I like these: https://amzn.to/45DuyxV) leaving a small space at the top to allow for expansion as the popsicles freeze. Insert popsicle sticks or wooden skewers into the center of each mold.
  3. Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. For best results, it’s recommended to freeze them overnight.
  4. Once the popsicles are fully frozen, remove them from the molds by running warm water over the outside of the molds for a few seconds to loosen them. Gently pull the popsicles out and enjoy your delicious and healthy homemade treats!
