Dressing Ingredients

  • ⅓ cup extra virgin olive oil
  • ¼ cup lime juice
  • 3 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 3 tsp sea salt
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp fresh ground pepper

“Caviar” Ingredients

  • 1 red bell pepper, small dice
  • 1/2 cup tomatoes, small dice
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 2 cans black eyed peas, drained and rinsed
  • 1 can hearts of palm (riced or chopped fine)
  • 1/3 cup cilantro, chopped fine
  • 1 small jalapeño, seeded and diced small (add an extra if you want to kick up the spice!)
  • 1 large avocado, small dice
  • 1 cup red onion, small dice (can opt for shallot instead)
  • 1 can black soybeans, (lower carb/higher protein) drained and rinsed (or use black beans)

Optional Add Ins

  • feta
  • sliced black olives




Make the Dressing

  1. In a small jar, add all of the dressing ingredients and shake well

Make the “Caviar”

  1. In a large bowl, add all  ingredients, pour the dressing over the veggies and beans and toss to coat. Taste and add more spices as needed.
  2. Eat as a salad, salsa or dip and enjoy!





Cowgirl Caviar will keep in the refrigerator for 3 days in an airtight container. This salsa tastes best when allowed to marinate and soak up the flavors of the dressing for a couple hours.
