
FUN5 Cowgirl Caviar
Ingredients

Dressing Ingredients
- ⅓ cup extra virgin olive oil
- ¼ cup lime juice
- 3 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 3 tsp sea salt
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp fresh ground pepper
“Caviar” Ingredients
- 1 red bell pepper, small dice
- 1/2 cup tomatoes, small dice
- 1 orange bell pepper
- 1 yellow bell pepper
- 2 cans black eyed peas, drained and rinsed
- 1 can hearts of palm (riced or chopped fine)
- 1/3 cup cilantro, chopped fine
- 1 small jalapeño, seeded and diced small (add an extra if you want to kick up the spice!)
- 1 large avocado, small dice
- 1 cup red onion, small dice (can opt for shallot instead)
- 1 can black soybeans, (lower carb/higher protein) drained and rinsed (or use black beans)
Optional Add Ins
- feta
- sliced black olives

INSTRUCTIONS
Make the Dressing
- In a small jar, add all of the dressing ingredients and shake well
Make the “Caviar”
- In a large bowl, add all ingredients, pour the dressing over the veggies and beans and toss to coat. Taste and add more spices as needed.
- Eat as a salad, salsa or dip and enjoy!
Notes
Note:
Cowgirl Caviar will keep in the refrigerator for 3 days in an airtight container. This salsa tastes best when allowed to marinate and soak up the flavors of the dressing for a couple hours.
