Crispy Roasted Delicata/Acorn Squash

  • 23 Delicata or Acorn Squash
  • Avocado Oil
  • Himalayan Sea Salt
  • Pepper


  1. Wash and cut off ends of squash
  2. Remove seeds (I love using a grapefruit spoon)
  3. Cut into 1/4-1/2 inch pieces
  4. Toss with avocado oil/salt/pepper
  5. Arrange on cook sheet flat, lined with parchment paper and roast at 425 degrees for 15-20 minutes and flip for another 15 mins

Enjoy on Salad, in a Nourishing Bowl or side dish.
