- Wash and cut off ends of squash
- Remove seeds (I love using a grapefruit spoon)
- Cut into 1/4-1/2 inch pieces
- Toss with avocado oil/salt/pepper
- Arrange on cook sheet flat, lined with parchment paper and roast at 425 degrees for 15-20 minutes and flip for another 15 mins
Enjoy on Salad, in a Nourishing Bowl or side dish.
