
Avocado My Chocolate Pudding with Coconut Cream Topping

Ingredients
- 4 Avocados (not overly ripe if you want less avocado flavor)
- 1 cup unsweetened Raw Cacao Powder
- 2–3 Dates (soft) Depends on your level of sweetness
- 1 cup full fat Coconut Milk (or Cream if you have on hand)
- 2 tsp Vanilla Extract
- 2 pinches of Cinnamon (optional)
Optional Toppings:
- Coconut Whipped Cream
- Gluten Free Granola
- Fresh fruit ( I love blueberries)
Instructions
Blend all ingredients (minus topping) in a blender/food processor until smooth. Make sure to chill 30 minutes to 1 hour before serving! Enjoy!!
Easy Coconut Cream Recipe
- 14 oz Can of Coconut Cream (I love Trader Joe’s) or Full Fat Coconut milk (put both in fridge overnight)
- 1 Tbsp coconut sugar or raw honey
- Combine ingredients in a blender and whip well. Chill and enjoy!
