I have the perfect solution. Jar salads.
I recently talked about them on my last appearance on KTLA
Now some of you may be thinking you aren’t the salad ‘type’ because you like your animal proteins. I always tell my animal loving protein clients….it is important to live a plant “focused life”. You can still enjoy animal protein in your diet if you enjoy it, but make sure you are putting more greens and vegetables on your plate vs. animal protein.
Chose plant based foods that are easy to digest, antioxidant rich,
have lots of pre and probiotics and are full of healthy fats.
Mason Jar salads are a great option for getting more
plant based foods in your diet.
What’s not to love?
They help you save money by making your own lunch. There are unlimited combinations using your favorite healthy ingredients. They are easy to clean up!
Here is one of my favorite mason jar salads with chickpeas (rich in protein), tahini, greens, tart cherries (lower in sugar than other dried fruit) and a raw apple cider vinegarette.
- Remember when you are building a jar salad put the dressing on the bottom.
- Hard veggies go in next, followed by beans or grains.
- Then add the proteins like tuna, chicken, eggs or tofu.
- Finally the greens.
NOTE: If you want to add tomatoes or avocados or fresh fruit add those the day you eat it.
I love these because they are simple to make, keep well for 4-5 days in the fridge, and all you need to do to eat them is shake and grab a fork! Instant healthy meal.
